As a hot vegetable, brushed with melted butter or margarine, it can scarcely be improved upon. However, it can be served cold in a novel and delicious style as jellied asparagus. This by the way is an excellent luncheon dish. Cook and cool the asparagus stalks. Hard boil three eggs, and prepare some gelatine, dissolved in the liquid in which the asparagus has been cooked. Place a layer of egg slices in a mold, then a layer of asparagus and repeat until the mold is filled. Pour the gelatine mixture over the layers. Keep in the refrigerator about two hours or until perfectly set.
